Super Easy Prawn Linguine

If you can’t be chewed to go shopping, but have the following few ingredients, have I got a treat for you?!

This really simple prawn linguine recipe is not only super speedy, but so bloody tasty. It’s a good one if you’re on your own too and cooking seems like a chore. The recipe is for one medium sized woman, adjust as necessary.

So, all you’ll need is:

  • Cherry tomatoes, a handful and sliced in half
  • 300g Prawns
  • Two teaspoons of Parsley, flat leaf or dried, take your pick
  • Spaghetti – I don’t know how much. Your guess is as good as mine.
  • Four garlic cloves, chopped finely
  • Two teaspoons of dried chilli
  • A glug of white wine
  • Coconut oil/olive oil

Are you ready for just how simple this little number is? You sure?

Okay, so, cook your pasta as normal. Once done pop to one side and save around 100ml of the liquid you cooked it in.

Pop the oil in a pan, I always use coconut oil, it just adds something to the dish. And once melted, add your chilli and garlic.

Fry for one minute until fragrant.

Then, in goes the prawns and tomatoes for a further two minutes.

If you’re prawns aren’t already cooked, pop them in first until pink – then add your toms.

Stirring well, add your leftover cooking liquid and a good splash of white wine. You could always leave out half of the cooking liquid and add more white wine, completely depends on how much of an alcoholic you are.

Then, in goes the pasta. Cook on a low heat until the liquid has disappeared. Stir in the parsley, and there you have it.

Told you, didn’t I? Piece of piss.

And so outrageously good too.
