Parmesan Crusted Salmon

Here we go! The very first food related blog post.

I thought I’d let you all think I was this incredibly nutritious, health conscious wonder and knock up a salmon dish.

I am none of the above.

But I do love fish. Especially salmon. And the beauty of it is, it’s just so simple. This little number can be prepped and cooked within 30 minutes.

So, let’s get cracking! You’ll need:

  • Two salmon fillets
  • Two garlic cloves, crushed
  • Squeeze of lemon juice
  • 10g breadcrumbs
  • 15g grated Parmesan
  • 2 tbsp chopped parsley
  • Sprinkle of paprika

Mix the garlic, breadcrumbs, Parmesan, parsley and paprika together.

Squeeze lemon over the salmon fillets. I always cook mine in tin foil. And then cover the top of your fillets in the crust mix.

Bake the salmon for twenty minutes until it’s a pale pink colour.

Easy, eh? We ate with garlic mash and asparagus cooked in coconut oil and cracked black pepper.

Quick, simple and proper scrumptious.

Let me know if you’ve gave it a go! You can tweet me @properscrummy! I’d love some pics too!
